From chapter 1, "Party Jollof". Every guide is written like a story, with real research behind it.
Thursday, 9:10pm. The Car Park Sessions. The smell of Femi's leftover jollof, which he brought in a cooler.
Femi arrived with a cooler of party jollof from the hotel kitchen. The men ate standing up, off paper plates, smoky rice and fried plantain, and for a few minutes nobody said a word.
"How long does this take?" Dapo asked, mouth full.
"Properly? Hours," said Femi. "You fry the pepper base slowly until the oil rises. You let the rice steam on low heat. You let the bottom catch a little for the smoky taste. You cannot rush it. If you rush it, you get wet, pale rice and everyone is disappointed."
Jide put down his plate slowly. He picked up the marker. He wrote on the whiteboard: FOREPLAY IS PARTY JOLLOF.
The car park cheered. Femi looked confused. "I was just talking about rice."
"You were talking about much more than rice," said Jide.
